Laughter the best medicine...

Originally this was going to just be a post about game day snacks but the evening took a funny turn.  We had our friend, Travis over for dinner.  I got everything together, set out on the table.  We had all sat down to start eating dinner, passing the food around the table, filling out plates.  Just as we're beginning to eat, Paul goes to set the bottle of ketchup down, it slips out of his hand, crashes onto the table knocking over his glass of water which lands in my plate and all over my lap.  Then his glass hits my water glass which launches off to the side and the water lands in Travis' lap.  We couldn't help but laugh about the whole thing as we're all trying to stop all the water from running off the table onto the hardwood floors.  Something so simple, a huge mess, my food on my plate was drowning in water and all we did was laugh.  It's amazing how something so disastrous can create a moment shared among friends.  

For game day snacks I made Chicken Quesadilla, Buffalo Chicken Wings, Curly Fries.   


Chicken Quesadilla
2 c chopped chicken
1 jar Hannaford Fresh in a Minute Pico De Gallo Sauce

3 Scallions, chopped
2 c Four Cheese Blend of shredded cheese
6 Fajita Size Tortillas

Mix chicken and Pico De Gallo sauce together in a medium bowl.  Stir in green onions.  
Heat Skillet on medium heat.  Once heated place one tortilla down, spread with a layer of shredded cheese,  spoon 1/3 of chicken mixture over cheese, sprinkle with more cheese and place tortilla cheese on top.  Grill for 2-3 minutes and flip.  




Buffalo Chicken Wings
In a large frying pan, melt 2 tbsp butter on medium heat.  
Add the following ingredients and stir: 
1/2 c chicken broth
1 c Frank's Buffalo Wing Sauce
1 tbsp paprika 
1 tbsp honey

Whisk until combined.  Add 2 lbs of party chicken wings in a single layer.  On medium heat cook for 10 minutes and stir, cook for an additional 10 minutes.  Using tongs remove wings and place on a foiled cookie sheet, lightly sprayed with cooking spray.  Wings should make a single layer on the cookie sheet.  Cook in a preheated 425 degree oven.  Set timer for 10 minutes, flip chicken wings and cook for an additional 10 minutes.  
Simmer remaining sauce until thickened in fry pan, remove from heat and pour into a Tupperware dish with lid.  Remove wings from cookie sheet into Tupperware dish, place lid on and shake to coat.  Place wings using tongs onto serving dish.  



Lastly, serve with all the fixings (Guacamole, Fresh Salsa, Sour Cream and Ranch Dressing)


Remember the best ingredient is time spent with friends and laughter!
