Clean Eating Pulled Pork

I'm always in search of new recipes to try or quick and easy meal solutions for the work week.  I made this the other day in the slow cooker.  It came out really yummy and good for you.  My husband doesn't care for pork and he ate it up.  If you like the BBQ sauce flavored pulled pork, this isn't the same it is more of a tomato flavor base with a little kick.  Served it with Rice, French Style Green Beans and homemade Naan Bread.  

2-(15 oz) cans tomato sauce, no salt added
1 (10oz) can Rotel tomatoes, liquid drained
3 tbsp onion powder
2 tbsp garlic powder
1 tbsp Cumin 
2 tsp cinnamon
2 tsp Chilli Powder
1/2 tsp cayenne

6- 1-inch thick boneless pork chops

Place pork chops in your slow cooker.  

In medium bowl, mix together tomato sauce, Rotel and spices.  Pour the sauce over the chops.  

Cook on low heat for 5-7 hours (I cooked mine closer to the 7 hours) until pork easily shreds with a fork, should be able to shred by just stir the pot or twisting a fork in the pork pieces.  

Enjoy on your favorite bun or serve as a meal with a starch and vegetable.
