Quick and Easy: Shrimp Arugula Salad

+When there is a special or sale on raw shrimp at the store, I always stock up, it's a great quick meal if you have it  on hand.  

Shrimp and Arugula Salad

1 lb raw shrimp, peeled 
1 tsp Mrs. Dash Jamaican Seasoning mix
Olive Oil

Take an 8X8 foil pan and drizzle the bottom with olive oil, line shrimp in single layer in the bottom of the pan.  I cooked mine on the grill but you can back in the oven as well (Oven: 350 degrees, 10-15 minutes).  




Cook shrimp until pink.  

While you are waiting for the shrimp to cook, prepare your salad.  You'll have enough shrimp for two salads but I'm only going to prepared one.  Just adjust your lettuce mix for two if you are feeding more then one person.  

1 cup thinly sliced Romaine Lettuce
1 cup Arugula Lettuce
1/2 cucumber, peeled, halved, quartered and sliced


Layer salad with shrimp on top.  


Serve with your favorite dressing or eat as is, tasty either way.  I served my salad with a 1/2 cup of sweet potato.  A quick and easy spring lunch or dinner.  Packs easy for lunch at work as well.
