A sweet delight with a hint of coconut...

As cooler weather fast approaches, one of my favorite things to do is cook or bake up something delicious in the kitchen.  It warms the house and fills the air with wonderful smells.  My husband loves cookies so there usually is a batch kicking around the house.  I love to experiment with different flavors or combinations, you can take a staple cookie and change it just by switching an ingredient.  

White Chocolate Coconut Macadamia Nut Cookie



1 c butter or margarine. softened
3/4 c packed light brown sugar
1/2 c white sugar
2 eggs
1/2 tsp vanilla extract
1/2 tsp almond extract

Cream together butter, brown sugar, and white sugar until smooth.  Beat in the eggs one at a time and then add the vanilla and almond extracts.  

2 1/2 c flour
1 tsp baking soda
1/2 tsp salt

Combine dry ingredients and gradually stir into creamed mixture.  



1 c coarsely chopped macadamia nuts
1 c white chocolate chips 
1/2 c shredded coconut

Mix into cookie batter until combined.  


Drop by teaspoon onto parchment lined cookie sheet.   


Preheat oven to 350 degrees.  Bake for 10-12 minutes. 
Cool on wire rack and enjoy!
