Hot Summer Nights call for Sausage Sub Grill Pizza

We've had hot, humid weather the past three days in Maine, which means that the house is way to hot to be firing up the oven.  So instead, we head to the grill to cook dinner.  If you love Sausage Subs, then you'll enjoy this pizza.  


Sausage, Onion and Pepper Pizza

Preheat Grill on high, then turn down to medium heat.  
1/2 Red Pepper, sliced 1/4 inch thick
1/2 Yellow Pepper, sliced 1/4 inch think
1/2 Orange Pepper, sliced 1/4 inch thick
1 sweet onion, peeled, cut into quarters and then sliced
1 lb Sweet Italian Sausage

In foil pan, layer onions and peppers, drizzle with olive oil and sprinkle to taste with garlic powder and pepper.  

Place foil dish on grill with sausage and saute/grill until cooked through.  


Remove from grill and set aside.  

1 pkg favorite pizza dough ( I usually make my own pizza dough from scratch but when I don't have time, I love to use Portland Pie Pizza Dough)
Olive Oil

Cut dough into four equal pieces.  Roll each piece into a rough circle.  Brush each piece with olive oil and place on hot grill (medium-high heat).  Cook 2-3 minutes until grill marks show.  Brush top with olive oil and flip, grill for another 1-2 minutes.  Remove from grill and lay-out flat on a cookie sheet.  


Slice Sweet Italian Sausage into 1/4 inch thick slices and divide between four pizzas.  Lightly chop onions and peppers, divide between four pizzas.  

1 cup shredded mozzarella cheese, divide four ways.  Sprinkle on top of each pizza.  
4 tbsp shredded Parmesan cheese, divided four ways.  Sprinkle on top of each pizza.  
1 tsp, crushed red pepper or to taste sprinkled on each pizza
pinch of Italian seasoning, sprinkle on each pizza


Place each pizza back on the grill.

Grill for 2-3 minutes on low heat and shut off burners, let set for 2 minutes until cheese is melted.
