Indoor Smores...when getting a good ol' camp fire going isn't possible!
One of my favorite foods of summer is S'mores. I have mastered a good s'more, even branched out from the traditional to making them with Reese's peanut butter cups. Recently, I was at a meeting for work and someone brought a pan of these in. They fulfill the S'mores fix when you can't get out and enjoy the great outdoors with a roaring campfire.
I started with the original recipe this time but next time, I'm definitely going to doctor these babies up. Add some chopped nuts, maybe.
Indoor S'mores
Spray a 13x9 rectangular pan with cooking spray
Take 12 graham cracker squares and break them in half and then each piece in half (should be roughly the size of a postage stamp)
Measure 3 cups of milk chocolate chips and put them into a large sauce pan. Add 2 tbsp peanut butter. Melt on low, stirring regularly to prevent from burning. When smooth and creamy, remove from heat.
Stir in 3 cups mini marshmallows and graham cracker pieces until fully coated.
Spread mixture into rectangular pan. Put pan of bars in the fridge for 1 hour or until firm.
Cut pan of bars and store leftover bars in the fridge.
Now all you need is a group of friends and family to share some campfire stories and it's just like sitting next to a fire making S'mores.
